Pumpkin casserole (Briam kolokithi)

600 g peeled pumpkin, sliced 1 cm thick

400 g peeled potatoes, sliced thinly

400 g boletes, sliced. You can replace these with a mixture of soaked, dried boletes and regular mushrooms (keep the soaking water)

2 onions, sliced in rings

2 cloves garlic, minced

5 Tablespoons olive oil

2 T parsley, chopped fine

1 T rosemary, chopped fine

salt, pepper

200 g feta (opt.), cubed

 

Heat oven to 150 °C.

Line a large oven dish with parchment paper (this allows you to use less oil when baking). Place all ingredients except the feta in the dish and mix lightly with your hands. Pour ½ cup of warm water over the top (including mushroom water), cover with foil and bake 30 min. If wished, divide the feta over the vegetables and continue baking another 20-30 min. With or without feta, a delicious and easy meal!
