Fruit cake (Keik nistisimo)

This is not a traditional Greek recipe, but one of my mother’s recipes that I adapted. As it has no eggs and no butter, it is a good and quickly prepared cake for Lent.

450 g self-raising flour

250 g raisins

200 g candied peel

100 g honey

150 g brown sugar

1 t aniseed

zest of one orange

1 T cinnamon or mixed spice

50 g sunflower seeds or chopped walnuts (optional)

500 ml orange juice

 

Preheat oven to 170 °C. Grease and flour a loaf or bundt pan.

Sift the flour into a large bowl and add the raisins, candied peel, honey, brown sugar, aniseed, zest, spices and seeds/nuts (if using). Pour on the orange juice and mix well. Turn into the cake tin and bake 50 min, until done (a toothpick inserted in the middle should come out clean).
