Winter salad (Politiki salata)
A hearty salad: it is easy, healthy and it also keeps well.
½ white cabbage, thick core removed, sliced very finely
1 red & 1 green pepper, cleaned en sliced in thin strips
1 large or 3 small carrots, scraped and grated
3 ribs celery or 1 bunch of celery leaves, chopped fine
optional: 1 hot red pepper, minced
2 cloves garlic, crushed
1 teaspoon salt
3 Tablespoons olive oil
2 Tablespoons red wine vinegar (Porfyron)
Mix all the vegetables together in a large bowl, sprinkle with the salt and knead/mix all this together with (washed!) hands. Let stand overnight.
The next day, season with olive oil and vinegar. If wished, serve with capers, olives and a sprinkle of paprika. This salad can be kept in an airtight container up to 5 days in the refrigerator. It makes a nice accompaniment to fish and meat dishes, or as part of a vegetarian meal, or with bean soup, on a sandwich, with a small piece of feta….enjoy!
