Whole wheat bread

A recipe for whole wheat bread without using a bread-making machine: use those muscles and get kneading! This makes 3 loaves.

1 l warm water

40 g fresh yeast

1 Tablespoon salt

1 Tablespoon sugar

1 teaspoon vinegar

½ teaspoon cardamom powder

handful of sunflower seeds

handful pumpkin seeds (or other seeds)

1250 g  organic whole wheat flour

400-500 g white flour

 

Pour warm water in a large bowl. Mix in yeast and allow to dissolve. Add salt, sugar, vinegar, cardamom and seeds. Gradually add the flour, stirring it in first with a big spoon and then with your hands, using as much flour as necessary until the dough no longer sticks to your hands. Knead for 5 to 10 minutes, then cover the bowl with a damp cloth and leave it to rise for 1 hour in a warm place.

Oil the 3 loaf pans and divide the dough into 3. Shape the pieces into loaves and place them in the pans, then allow the dough to rise at least ½ hour in a warm place. Preheat oven to 170° C. Bake thed bread for about 45 min- 1 hour. When the bread is baked through, it will sound hollow if you tap on it.

Making your own bread is very satisfying: it tastes wonderful straight fromt he oven, but also freezes very well. Just try it!
