Vegetarian autumn casserole (Briam me kastana kai manitaria)

4 Tablespoons olive oil

2 leeks, washed and sliced in rings

1 clove garlic (opt.)

250 g (wild) mushrooms, brushed and sliced

1 kg pumpkin, peeled and cubed

1 teaspoon cumin seeds

1 teaspoon curry powder

salt, pepper

250 g chestnuts, peeled and boiled

250 g sliced white cabbage

30 g pumpkin seeds

a few sprigs of cilantro (opt.)

 

In a large pan, heat the olive oil and fry the leek and garlic for a few minutes. Add the mushrooms and continue to stir fry. Add the pumpkin and continue frying for a few minutes more.

Season with cumin, curry, salt, pepper and (optional) cilantro. Mix in the cabbage, chestnuts and pumpkin seeds and transfer the mixture to an oven-proof dish. Cover and bake 30-40 minutes at 180 °C until done. Serve with bulgur or (brown) rice.
