Oven-baked spicy sausages & peppers (Spetzofai)
500 g spicy sausages (garlic sausages, but plain fresh sausages are also fine)
6 Tablespoons olive oil
3 green and 2 red peppers
3 large tomatoes
5 bay leaves
pinch of thyme and oregano
salt & pepper to taste
1 bunch of flat-leaved parsley
150 ml warm water
Preheat oven to 180 °C. Use 1 tablespoon of olive oil to oil a large oven dish. Chop the sausages into chunks. Wash and seed the peppers and chop roughly. Slice onion in rings, peel and dice the tomatoes. Mix sausages and vegetables with the herbs and spices. Chop the parsley and add to the rest, then put everything in the oven dish.
Pour the rest of the oil and the warm water over the entire contents and bake in the oven for 30-40 minutes.
