Ginger liquor (Piperorizaliker)
750 ml cognac or Metaxa
250 ml white wine
50 g grated fresh ginger root
2 cinnamon sticks
2 Tablespoons honey
1 sprig rosemary
8 cardamom pods, crushed
200 g brown sugar
Heat the white wine in a small pan together with the ginger, cinnamon, honey, rosemary and cardamom pods. Bring almost to the boil, remove from the heat and allow to cool completely. Mix the cognac and the wine mixture in a large flask or jar and allow this to stand, sealed, for 2 weeks.
Make a syrup by bringing the sugar and 200 ml water to a boil and boiling for a few minutes. Allow the syrup to cool. Sieve the liquor mixture into a large, clean bottle and add the syrup. Allow to stand for another few days before enjoying this delicious liquor.
