Courgette jam (Marmelada kolokithi)

A delicious Greek-French-Dutch recipe for a surprising jam that makes a fine accompaniment to (feta) cheese

1 kg courgette, grated

3 organic lemons, zest and juice

1 organic orange, zest and juice

2 Tablespoons fresh herbs (use any combination of thyme, oregano, sage, rosemary, lavender, marjoram, or you can add 1 T of grated fresh ginger)

2 teaspoons cinnamon

500 g sugar or jam sugar

jam pectin if using regular sugar

 

Mix the courgette with the juice and zest of the lemons and oranges and the herbs and spices. Bring to a boil, then add the sugar (and pectin if separate) and cook for 4 minutes. Pour into clean, hot jars, twist on the lids and allow the jars to stand upside down for 20 minutes.
