Chocolate Log (Kormos)
A very easy treat, nice to have on hand.
250 g biscuits such as digestives or plain tea biscuits
250 g butter or margarine
175 g powdered sugar
5 Tablespoons cognac
5 Tablespoons cocoa
100 g walnuts
Chop the biscuits and walnuts into small pieces. Melt the margarine or butter. Mix all the ingredients together and refrigerate ½ hour.
Shape the mixture into a log onto a piece of foil or baking parchment. Refrigerate the log for 3-4 hours. To serve, cut into slices about ¾ -1 cm thick.
You may also press the mixture into a cake pan, and cut into squares when cooled.
If you wish, you can replace the cognac with another liquor, or jam such as orange or tangerine marmalade; hazelnuts, almonds or sunflower seeds can replace the walnuts.
You may store this log-cake in the freezer, and thaw it for 1 hour before serving.
