Bulgur salad (Pligouri salata)

Cracked wheat, or bulgur, can be used in many recipes: here in a main or side-dish salad, nourishing, healthy and easy.

200 g bulgur
1 onion, minced
3 tomatoes, chopped fine or 200 g cherry tomatoes, quartered
½ cucumber, peeled and diced
1 cup minced flat-leaved parsley
2 Tablespoons finely chopped fresh mint leaves
3-4 Tablespoons olive oil
dash of lemon juice
salt & pepper to taste

Cook the bulgur following instructions on the packet; allow to cool. Add all the other ingredients to the bulgur, mix well and refrigerate for at least 1 hour before serving.
