Braised fresh peas (Fresko arakas)

A nice summer dish, which can be eaten warm or cold with some bread and feta

1 kg peas, shelled

200 g snow peas, trimmed

4-5 small courgettes (10-12 cm long), chopped

2 carrots, scraped and chopped

5-6 spring onions, chopped

6 T olive oil

1 tomato, chopped fine

a few sprigs of parsley, basil and 2 sage leaves, chopped fine

salt and pepper

 

Heat the olive oil in a large pan and fry the spring onions for a couple of minutes. Add the peas, snow peas, courgettes, and carrots. Add the tomato and heat through. Add the herbs, salt and pepper to taste, and about 400 ml water (not enough to cover the vegetables but enough to prevent scorching). Simmer  about 20 minutes until done.
