Lamb stew with zucchini flowers (Arni me kolokithakia)

A delicious dish for during the zucchini season

100 g butter

10 spring onions, chopped fine

salt

1.25 kg lamb meat, with bone, cut into portions

100 ml dry white wine

1 kg small zucchinis (about 15 cm long) chopped into chunks

A large handful of fresh zucchini flowers

½ bunch of fresh dill, chopped fine

pepper and oregano to taste

250 ml water

 

Heat the butter in a large pot and fry the spring onions for a few minutes. Salt the pieces of meat and add them to the pot and allow them to brown, turning frequently. Pour in the white wine and allow the alcohol to evaporate. Add the zucchinis, zucchini flowers, dill, pepper and oregano and pour the water in. Bring to a boil and allow to simmer, covered, for about 45 minutes, checking every now and then to make sure there is enough liquid in the pot to fully cook the meat. When done, remove from the heat and allow to sit for a few minutes before serving. This stew taste great with a nice crunchy bread, feta cheese if wished, and a salad.
