Angel kisses (Marenga foudoukiou)

These angel kisses taste, well….just like the kiss of an angel! We often make these cookies for people on gluten-free diets. They are ready in no time.

2 egg whites

dash salt

½ t vanilla essence

100 g sugar

100 g hazelnuts or almonds, chopped fine and toasted

 

Preheat oven to 150 °C

 

Whisk the egg whites with salt until foamy. Add sugar bit by bit, then the vanilla essence and continue beating until stiff. Fold in the nuts.

Line a baking sheet with parchment paper. Drop spoonfuls of the egg mixture on the baking sheet. Bake about 20 minutes, until done. The tops and bottoms of the cookies should be lightly browned and dry. Cool, then store in a tin.
